Recipes using pumpkin or squash

These are tried and true recipes!!

Easy Pumpkin  Pie Dessert

4 eggs, beaten                     1 1/2 C sugar

1 tsp salt                                2 tsp cinnamon

3 1/2 C pumpkin or squash   1/2 tsp cloves

1 cup evaporated milk

Mix everything together and pour into a greased 9 x 13 pan. Sprinkle 1 package of Butter Brickle, Butter Pecan, or Yellow cake mix on the mixture and pour 1/2 C butter or oleo over that. Bake at 350* for 45-50 minutes. Top with Cool Whip.

This recipe can be halved easily and put in a 9 x 9 pan. Also, any cake mix flavors close to these work well.

I use a Watkin's pumpkin spice mix instead of all the separate spices.  I also add some Watkin's Butternut flavoring. You will get rave reviews!

Squash and Apple Bake

2 lb. squash                            1 Tbsp flour

2 apples, cored and sliced    1 tsp salt

1/2 C brown sugar                    1/2 tsp cinnamon

1/4 C butter, melted

Cut squash in half lengthwise, and remove seeds. Peel and cut into 1/2 slices. Arrange in a greased 8 x 12 dish. Top with sliced apples. Combine remaining ingredients and spoon over apples Cover tightly with foil. Bake at 350* for 1 hour and 15 minutes.

The recipe calls for butternut, but I have used acorn or festival with success.
